INGREDIENTS

2 CUPS OF SUGAR AND 1 CUP OF WATER FOR EVERY ETROG

THE JUICE OF HALF A LEMON    

 

INSTRUCTIONS

 

PEEL THE ETROG MAKING SURE NO YELLOW OR GREEN PARTS ARE LEFT. CUT THEM IN QUARTERS LENGTH WISE AND REMOVE THE SEEDS. PLACE WATER TO BOIL WITH A DROP OF SALT, ONCE BOILING ADD ETROG.

LET IT BOIL FOR 2 MINUTES, AND STRAIN.

LET IS SOAK FOR 2 DAYS CHANGING THE WATER CONSTANTLY AND ALSO PUSH THE ETROG TO REMOVE SOME OF THE BITTER LIQUID. PLACE THE 2 CUPS OF SUGAR AND 1 CUP OF WATER FOR EACH ETROG WITH THE LEMON JUICE TO BOIL. ONCE BOILING ADD THE ETROG WELL DRAINED AND LET IT CARAMELIZE ABOUT 45 MINUTES TO 1 HOUR, SHOULD LOOK WHITE. IF IT CARAMELIZES TOO SOON ADD WATER SO IT COOKS WELL.
