Dark Fruit Cake

 

INGREDIENTS

1 CUP OF BROWN SUGAR

1 ½ CUPS OF WATER

1 CUP OF PRUNES CUT IN 4

150 ML OF OIL

½ TEASPOON OF NUTMEG

1 TEASPOON OF CINNAMON

2 ½ CUPS OF SIFTED FLOUR

¼ TEASPOON OF SALT

½ CUP OF CHOPPED PEACANS

½ CUP OF ALMONDS CHOPPED

 

INSTRUCTIONS

 

PLACE IN A PAN THE SUGAR, WATER, PRUNES, OIL, NUTMEG AND CINNAMON.

LET BOIL FOR 3 MINUTES, REMOVE FROM FLAME AND LET COOL.

ADD THE SALT, FLOUR AND WITH A SMALL AMOUNT OF THE MIX, ADD THE PEACANS AND ALMONDS.

ADD THE FLOUR TO THE MIX LITTLE BY LITTLE.

LASTLY ADD THE PEACANS AND ALMONDS.

PLACE THE MIX IN A MOLD PREVIOUSLY GREASED AND BAKE AT 180 FOR 45 MINUTES APPROX.
