Chicken Breast or Turkey with Potatoes

 

INGREDIENTS

1 TABLESPOON OF OLIVE OIL

700 GRAMS OF CHICKEN BREAST, OR TURKEY CUT IN CUBES

3 CARROTS SLICED THINELY

1 ONION CHOPPED

3 CELERY STICKS, SLICED IN RINGS

2 TABLESPOONS OF FLOUR

4 TOMATOES CHOPPED

2 CUPS OF CHICKEN STOCK

SALT AND PEPPER TO TASTE

5-6 POTATOES PEELES AND SLICED THINELY

 

INSTRUCTIONS

 

 

 

 

PREHEAT OVEN AT 180’C

HEAT UP THE OIL AND FRY THE CHICKEN OR TURKEY FOR ABOUT 5 MINUTES, REMOVE FROM PAN.

TO THE SAME PAN ADD, CARROTS, ONION, CELERY AND FRY FOR 5 MINUTES.

WE PLACE THE CHICKEN BACK IN THE PAN AND ADD THE FLOUR AN DMIX VERY GOOD SO THERE ARE NO CLUMPS, ADD THE TOMATOES AND STOCK, COOK FOR 4 MINUTS MORE. ADD SALT AND PEPPER AND PLACE IN AN OVEN SAFE PAN PREVIOUSLY GREASED. PLACE ON TOP OF THE STIR FRY THE POTATOES AND ADD MARGERINE OR OIL OVER THE POTATOES ADD SALT AND PEPPER TO TASTE.

COVER WITH ALUMINUM FOIL AND BAKE FOR 1-2 HOURS UNTIL THE POTATOES ARE COOKED.

FOR THE LAST 45 MINUTES REMOVE THE ALUMINUM FOIL.
